This vegetable soup recipe utilises one of my favourite vegetables - broccoli.

Broccoli is an incredible vegetable that has so many benefits such as being good for heart health, supports your immune system, good for eye health and much more. On top of this, broccoli is a fantastic source of fibre, vitamin C, vitamin K, iron, potassium - implementing this incredible vegetable into this tasty vegan vegetable soups recipe was a no-brainer.

This vegan broccoli soup recipe has no nuts, and only a has a handful of ingredients. Making this one of the quickest vegan vegetable soups that you’ll make.

For this vegan broccoli soup, we start of by browning your brown onion, and then it’s simply a case of adding in a few cups of your vegetable stock, two potatoes (helps with thickness) and about 700g of broccoli florets.

Allow these ingredients to simmer until they begin to soften and you can easily pierce your potatoes.

Once this has been done, we will blend up our vegetables until smooth, bring it back to heat and adding in any additional flavours you like, such as salt and pepper.

INGREDIENTS

Vegan Broccoli Soup Recipe

  • 1 brown onion, diced

  • 2 potatoes, diced

  • 700g broccoli florets (about two medium broccolis)

  • 5 cups vegetable stock

  • 3 tbsp vegan butter

  • Salt and pepper to taste

  • OPTIONAL: 1 tsp of cayenne pepper

METHOD

◾ In a large pot on a medium heat add oil and onion. Stirring until translucent

◾ Add to the pot potatoes, broccoli and vegetable stock. Allow to simmer on a low heat for about 10 minutes or until potatoes have softened. Turn off heat and allow to cool

◾ Blend to your prefer consistency

◾ Bring back to a low heat and add in vegan butter, salt and pepper. Continue to stir until butter has melted and soup has reached temperature
