Vegan Friendly Curried Sausages
Delicious Curried Sausages!
I feel like everyone's nan had their own curried sausage recipe that has been passed down through the generations, using all sorts of different ingredients.
While this isn't my nan's recipe, it is my little take on this absolute fan-favourite meal.
INGREDIENTS
Curried Sausages
300g vegan sausages
1 onion, diced
2 carrots, sliced
2 garlic cloves, minced
2 tbsp curry powder
2 tbsp jam (I use strawberry)
2 cups veggie stock
1 cup frozen peas
METHOD
Fry up sausages in a fry pan with a little bit of oil. Once cooked, set aside and slice
Place onion, carrots and garlic into a pan and cook for about 5 minutes.
Add curry and mix until fragrant
Add jam, stock and sausages and allow to simmer for about 20 minutes and sauce has thickened.
Add peas and cook for a further 5 minutes
