Vegan Friendly Curried Sausages

Delicious Curried Sausages!

I feel like everyone's nan had their own curried sausage recipe that has been passed down through the generations, using all sorts of different ingredients.⁠

While this isn't my nan's recipe, it is my little take on this absolute fan-favourite meal.⁠

INGREDIENTS

Curried Sausages

  • 300g vegan sausages⁠

  • 1 onion, diced⁠

  • 2 carrots, sliced⁠

  • 2 garlic cloves, minced⁠

  • 2 tbsp curry powder⁠

  • 2 tbsp jam (I use strawberry)⁠

  • 2 cups veggie stock⁠

  • 1 cup frozen peas⁠

METHOD

  • Fry up sausages in a fry pan with a little bit of oil. Once cooked, set aside and slice⁠

  • Place onion, carrots and garlic into a pan and cook for about 5 minutes.⁠

  • Add curry and mix until fragrant⁠

  • Add jam, stock and sausages and allow to simmer for about 20 minutes and sauce has thickened.⁠

  • Add peas and cook for a further 5 minutes ⁠
