Fluffiest Vegan Blueberry Muffins

There's not too much better than smelling delicious muffins, especially blueberry muffins!⁠

⁠Blueberry muffins are definitely a top tier muffin, and this simple vegan friendly recipe is definitely a keeper.⁠

This blueberry muffin recipe utilises bananas, and you can either use fresh or dried blueberries (or BOTH!) for this recipe.

INGREDIENTS

◾ 1 Banana⁠

◾ 1/4 cup vegan butter (melted)⁠

◾ 1 cup sugar⁠

◾ 1 cup soy milk⁠

◾ 2 cups plain flour⁠

◾ 1 tsp salt⁠

◾ 1 tsp bi carb soda⁠

◾ 1/2 cup blueberries (dried or fresh)⁠

METHOD

▪️ Pre heat oven to 180c and prepare a muffin tray⁠

▪️ In a large bowl, mash the banana with a fork until soft. Add in butter, sugar and soy milk and mix to combine⁠

▪️ In a separate bowl, combine flour, salt, bi carb soda. Add this flour mixture with wet ingredients and gently fold until well combined.⁠

▪️ Add in blueberries and fold through batter mixture⁠

▪️ Spoon batter into muffin tray⁠

▪️ Bake muffins for about 25 minutes. Allow to cool in the muffin tray
