A flax egg is a simple plant-based egg substitute made by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water. After sitting for 5–10 minutes, it becomes thick and gel-like — working as a binder just like a chicken egg.
Is 1 Flax Egg Equal to 1 Egg?
Yes! In most baking recipes, 1 flax egg = 1 regular egg. It’s not suitable for whipping (like in meringues), but it's perfect for cookies, brownies, blondies, vegan pancakes, and muffins.
What Can I Use Instead of a Flax Egg?

INGREDIENTS
Vegan Oreo Blondies
2 flax 'eggs' (to make 1 flax egg combine 1tbsp ground flaxseed and 3 tbsp)
2 ¼ cups plain flour
1 tsp salt
½ tsp bi-carb soda
¾ cup vegan butter, melted
1 cup sugar
¾ cup brown sugar
2 flax “eggs” (2 tbsp ground flaxseed + 6 tbsp water)
1 tsp vanilla extract
1 ½ cups Oreos, crumbled
METHOD
Preheat oven to 180°C.
In a small bowl, mix 2 tbsp ground flaxseed with 6 tbsp water. Let it sit for 10 minutes to thicken.
In a mixing bowl, sift together the flour, salt, and bi-carb soda.
In another bowl, combine melted butter, sugars, flax eggs, and vanilla. Mix until smooth.
Stir the dry mixture into the wet until combined.
Fold in 1 cup of crumbled Oreos.
Pour into a lined or greased rectangle tray, smooth the top, and press remaining Oreos into the surface.
Bake for 25 minutes, or until golden and set.
Cool in tray for 10 mins, then transfer to a wire rack to fully cool before slicing.
