Banana Oat Slice (Vegan)
There are some recipes that just make life easier, and this vegan banana oat slice is one of them.
It’s one of those simple, no-fuss bakes that comes together in one bowl, uses up those overripe bananas sitting on the bench, and gives you a ready-to-go snack for the week ahead. In our house, anything that works for lunchboxes and after-school snacks is an instant win. Bonus points for being freezer-friendly too - especially useful during those busy periods.
You probably know me by now, but I really love a recipe that is versatile, simple to whip up and forgiving. This vegan banana oat slice is another one of those great recipes.
You can keep it super simple, or mix things up depending on what you’ve got in the pantry. It’s soft, lightly sweet, and holds together well once cooled, which is perfect for kids, toddlers, or even just a quick snack with a coffee.
If you’ve ever found yourself staring into the pantry thinking “we’ve got nothing for lunchboxes”, this is a great one to have on rotation.
Why You’ll Love This Banana Oat Slice
This recipe ticks a lot of boxes for busy families trying to keep things simple without sacrificing nutrition or taste.
It’s naturally dairy-free, made with everyday pantry ingredients, and comes together in under 10 minutes before going into the oven. The rolled oats give it a nice texture and help keep it filling, while the banana brings together that natural sweetness without needing a huge amount of added sugar.
It’s also incredibly practical. It slices cleanly once cooled, packs well into lunchboxes, and freezes beautifully. That means you can make one batch and have snacks sorted for days (or weeks if you freeze it).
Ingredients That Make This Work
The beauty of this banana and oat slice recipe is how simple the ingredients are, but each one plays an important role in making one of my kid’s favourite snack.
The ripe bananas are the hero here. The riper they are, the sweeter and softer your slice will be. If they’ve got plenty of brown spots, you’re on the right track.
Rolled oats give structure and make the slice more filling, which is great for keeping kids satisfied between meals or after sports. Flour helps bind everything together, while a small amount of sugar enhances the natural sweetness without overpowering it.
The oil and plant-based milk keep the slice moist, while baking powder gives it a slight lift. Cinnamon adds warmth and flavour, and vanilla rounds everything out nicely.
If you want to boost it further, things like choc chips, sultanas, or seeds can easily be folded through depending on what your kids enjoy, and if you’re looking for a further nutritional boost.
Time-Saving Tips for Busy Weeks
One of the easiest ways to make this banana slice recipe work for you long-term is to treat it as a batch-prep staple.
Make a double batch when you’ve got time, slice it up, and freeze half. That way you’ve always got something ready to go for those busy mornings or afternoons when everything feels rushed and you need something fast!
Alternatively, you can also portion slices individually and freeze them so they’re easy to grab and pack straight into lunchboxes. By recess or lunchtime, they’ll be perfectly thawed and ready to eat.
Variations to Try
Once you’ve made this a couple of times, it’s easy to switch things up depending on what you’ve got on hand and the variations that you’d like to try.
You can add choc chips for a more treat-style slice, or keep it simple with just banana and oats. Swapping plain flour for wholemeal flour adds a slightly nuttier flavour, while adding seeds like hemp seeds or flax gives a small nutritional boost.
If your kids prefer a softer texture, you can add a touch more plant milk. If you want it firmer and more bar-like, reduce it slightly. As I said, the recipe is totally adaptable to your preferences!

If lunchboxes have been feeling a bit overwhelming lately, start here. One recipe, one small win, and build from there
INGREDIENTS
Banana Oat Slice - makes roughly 26 slices
3 ripe bananas, mashed
1½ cups rolled oats
¾ cup plain flour
¼ cup brown sugar or coconut sugar
¼ cup neutral oil (olive oil or vegetable oil)
¼ cup plant-based milk (soy, oat or almond)
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
Optional add-ins:
¼ cup choc chips
¼ cup sultanas
2 tbsp hemp seeds or ground flaxseed
METHOD
Preheat your oven to 180°C (fan-forced 160°C) and line a small slice tin with baking paper.
In a large bowl, mash the bananas until mostly smooth. A few small lumps are completely fine and add texture to the final slice.
Add the oil, plant milk and vanilla, stirring until everything is well combined.
Next, mix in the oats, flour, sugar, baking powder, cinnamon and salt. Stir until a thick batter forms. If you’re using any optional add-ins like choc chips or seeds, fold them through at this stage.
Spread the mixture evenly into your prepared tin, smoothing out the top.
Bake for 25–30 minutes, or until lightly golden and firm in the centre.
Allow the slice to cool completely in the tin before cutting. This step is key, as it helps the slice set properly and hold together when sliced.
