INGREDIENTS

Mexican Tofu Pasta Bake

  • 400g rigatoni or penne pasta

  • 450g firm tofu, drained

  • 1 brown onion, diced

  • 3 garlic cloves, minced

  • 1 red capsicum, diced

  • 1 cup corn kernels

  • 1 can black beans, drained and rinsed

  • 500g tomato passata

  • 2 tbsp tomato paste

  • 1 cup vegetable stock

Mexican Seasoning:

  • 2 tsp ground cumin

  • 1 tsp sweet paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tbsp nutritional yeast

  • 1 tbsp soy sauce

Creamy Cashew Topping:

  • ¾ cup cashews

  • ½ cup vegetable stock

  • ¼ cup nutritional yeast

  • 1 tbsp lemon juice

  • ½ tsp garlic powder

  • Salt to taste

Optional toppings:

  • Avocado

  • Coriander

  • Spring onion

  • JalapeƱos

  • Vegan sour cream

METHOD

  • Cook pasta according to packet instructions until slightly underdone. Drain and set aside.

  • Heat a large pan over medium heat. Add onion and capsicum and cook for 3–4 minutes until softened. Add garlic and cook for another minute. Crumble tofu into the pan and cook for around 5 minutes. Add cumin, paprika, garlic powder, onion powder, nutritional yeast and soy sauce. Mix well until the tofu is coated.

  • Add tomato passata, tomato paste, vegetable stock, corn, black beans. Mix together and simmer for 10 minutes.

  • Add cooked pasta into the sauce and mix well. Transfer the mixture into a baking dish.

  • Blend cashews, vegetable stock, nutritional yeast, lemon juice, garlic powder and salt until smooth. Spread over the pasta bake.

  • Bake at 180°C fan-forced for 15–20 minutes until heated through and lightly golden. Serve with your favourite toppings.
